Suya With A Twist

Suya is my all time favourite Nigerian food and as I was travelling back to Jozi for a few weeks I knew I had to get my hands on some Suya spice.  Suya originates from the Hausa people in Northern Nigeria and is a very popular street food found all over Lagos on the roadside and is available late into the night.

Suya spice is a combination of groundnuts (peanuts), cayenne pepper, paprika, salt, ginger powder, garlic powder and onion powder.  Thin slivers of beef or chicken are skewered on sticks and roasted over an open flame. Served with chopped tomatoes and onions.

This is my take on the traditional recipe........

Suya With A Twist

Take a few pieces of Rib-Eye steak..........

Chop them into bite sized chunks, more-or-less the same size.....


Brush them all over with some olive oil, make sure they are coated well
as this helps the spice to stick.........



Cover the steak chunks all over with the spice, making sure you rub it in well.........

Heat up a non-stick frying pan and add a little olive oil, when it gets nice and hot, brown your
Suya chunks on all sides, this only takes a few minutes.  Take off the heat, cover with
tin foil and leave to rest for a few minutes.  I put in a small spoonful of butter and
toss lightly before covering............

 
While you wait for your Suya chunks, slice some cherry tomatoes and red onions
into small pieces and put them onto skewers.  When the steak has rested pierce
each chunk with a skewer and plate up..........and there you have it.
